Kopi luwak, not luwak coffee. Why? Because kopi luwak is the name of coffee`s variety. If we want to call it in complete, it would be coffee Kopi luwak even coffee mean kopi in Indonesian. In the market its name is Kopi Luwak or Civet Coffee. Luwak is Indonesian name for the Asian palm civet. Civet has entire role in this kind of coffee. Luwak or civet or (Paradoxus hermaphroditus) are similar with the mongoose and are bit larger than a household cat. They steal and feasted matured coffee that already fall out the tree through the coffee plantations. It then passes through the body of the civet and become the waste. The inner bean of part isn`t digested. It has been proposed that enzymes in the stomach of the civet add to the coffee’s flavor by breaking down the proteins that give coffee its bitter taste. Farmers then pick out this stuff, process it and send to roasters.
Kopi luwak has become the most expensive coffee in the world. Yet this variety is the most unique beverage in the world. Simply, kopu luwak is made from beans passed through the digestive system of civet. The stomach acids and enzymatic action involved in this unique fermentation process produces the beans. It`s heavy caramel taste and musty. A pound of this coffee will cost about $300 or about $50 an cup. Kopi luak is wide available as number of production is quiet limited.
It`s reported that “electronic nose analysis” was able to detect differences between kopi luwak and undigested coffees, which may help confirm a particular batch’s authenticity.
